tasty tuesday: chicken & chips

I've tried to find this recipe online, but all I seem to find is potato chip chicken which is a different recipe. As this is a favorite in the Kuechenmeister household, I knew I had to share it's goodness with you. I was first given this recipe in December 2006 by my sweet friend Holly. I actually have the myspace message, in which it was sent, printed out and in my recipe book!

Anyway, I didn't think to take photos until I was 95% done with the prep work, so, sorry, no pictures.

Here's what you need:

1 can cream of chicken soup
1 cup sour cream
1 cup chunky salsa
1-ish lb boneless chicken breasts
shredded cheddar cheese
broken tortilla chips

You need the chicken to be cooked and cubed for this recipe. You can cook it however you like, but I prefer to cut up the chicken an drop them in a pot of boiling water.

While the chicken is cooking, combine the soup, sour cream, and salsa in a bowl.

After the chicken is done cooking, preheat the oven to 350°. In an 8x8 baking dish, layer half the chicken, half the soup mixture, some cheese and some chips. Repeat. Often, I top with a little more cheese. Bake for 25-30 minutes. Since Mike and I are so health conscious, we like to serve this meal with a side of chips and salsa. :)

Some of you are wondering why I said "some cheese and some chips" instead of an actual amount. And what about that "1-ish lbs" up in the ingredients? This recipe is incredibly forgiving. I bought a little less than a pound of chicken and 2-cup bag of shredded cheddar cheese. I layered as much as looked good to me.

So easy. So delicious. Mike was happy to hear that we were having chicken & chips for dinner and even happier to eat it. :)

  1. Mm, that does sound good. I have a recipe with similar ingredients, but it all goes together in the crock pot. Since I'm a fan of crunchy, I'm liking the idea of baking it in the oven.
