tasty tuesday: chicken & chips

I've tried to find this recipe online, but all I seem to find is potato chip chicken which is a different recipe. As this is a favorite in the Kuechenmeister household, I knew I had to share it's goodness with you. I was first given this recipe in December 2006 by my sweet friend Holly. I actually have the myspace message, in which it was sent, printed out and in my recipe book! Anyway, I didn't think to take photos until I was 95% done with the prep work, so, sorry, no pictures. Here's what you need: 1 can cream of chicken soup 1 cup sour cream 1 cup chunky salsa 1-ish lb boneless chicken breasts shredded cheddar cheese broken tortilla chips You need the chicken to be cooked and cubed for this recipe. You can cook it however you like, but I prefer to cut up the chicken an drop them in a pot of boiling water. While the chicken is cooking, combine the soup, sour cream, and salsa in a bowl. Tasty Tuesday: Date Night!

Yeah, okay, Tasty Tuesdays have been MIA lately because, well, the hubs has been working on Monday nights. Boo! Anyone want to watch the Bachelor finale with me tomorrow? Tenley or Vienna! Dun. Dun. Dun.... Anyway. Date night! Saturday, Mike had to work but got off at 7:30pm. I said, "Let's have a date tonight!"  And then promptly forgot to come up with something tasty until I only had two-and-a-half hours left. Being the domestic goddess that I am...I figured something out. We started with a yummy spring salad. Strawberries and walnuts on a bed of baby greens. And then had salmon with honey-mustard glaze and asparagus in lemon-butter sauce. Mike was pleasantly surprised when he came home (i.e. "Is that salmon?!"). We even cleared of our teeny-tiny kitchen table to eat. The table that is squished into the corner and I am backed up against the laundry closet's bi-fold doors. The only bad thing was the wine. Tasty Tuesday: stuffed shells

Yes. You read that right. I've never made stuffed shells. The closest I came was a few weeks ago when I watched Alanna make them. And I don't think watching someone cook is the same as cooking ;) This time, I'm actually going to share my recipe. I found one on AllRecipes to use, but I tweaked it a bit, so I'll just share what I did. :) ------ 26 uncooked jumbo pasta shells 1 pound ground beef 1/2 cup chopped onion 1 garlic clove, minced 2 (15 ounce) cans tomato sauce 1 (15 ounce) can Italian-style diced tomatoes, well drained 2 teaspoons dried oregano, divided 1/2 teaspoon dried basil Brown sugar (I'm not sure how much. My hand slipped. LOL. tasty tuesday: chicken kiev

So, my friend Alanna , told me about Chicken Kiev. Her brother, I think, had given her a vague recipe. She showed it to me and it sounded so tasty. Chicken stuffed with BUTTER. Wow. Must try. So, forget about that complicated Rachel Ray recipe I was thinking of and hello Chicken Kiev! I used this recipe I found and changed it up a tiny bit. They only part I changed of the actual food was I used 3 instead of 6 chicken breasts...but the ones I used were pretty big. I didn't realize that this recipe called for you to deep fry the chicken until I was at the cooking part. Because I'm a thorough reader like that. Instead, I put the chicken in a square baking dish like I do with the other stuffed chicken I make. Also, as with the other stuffed chicken, I decided to add some tomatoes. I tossed them in olive oil and arranged them around the chicken. Result? Delicious. My husband has actually been to the Ukraine (though, I'm not sure if he spent time in Kiev) and he like...

Yesterday, I made crab patties and ultimate cheddar bay biscuits . Stargirl turned me on to the crab patties (which, by the way, Mike and I are very impressed that you made them!) and they sounded pretty tasty, but once she sent me the recipe for the cheddar bay biscuits (I mean, who doesn't love those?), I knew I had a meal on my hands that I just had to try. I started the biscuits first. I had never made anything like this from scratch before, so just thinking about it was kind of daunting. Once I got started, though, everything was pretty easy. Mix this, stir that in, etc. The ingredients were all basic stuff that we had around the kitchen. I forgot to put in the cream of tartar, though. I have no idea how I missed it. I was worried about how our oven, which Mike has been known to call "diablo's furnace," would cook them. I really didn't want burnt biscuits.
